Large-grain salt is most effective, but you can use table salt if necessary.

Throw away your Teflon® cookware

If you have Teflon-coated pots and pans in your kitchen, throw them away. Teflon releases some toxins when heated that can be deadly. This includes other non-stick cookware under names like Silverstone, Tefal, Anolon, Circulon, Caphalon and others. They are safe for cooking until you heat them up.
Teflon is the trade name for Dupont's synthetic polymer, polytetrafluoroethylene (Non Stick Coating PTFE). Within five minutes, a Teflon-coated pan can heat to about 750ºF, and thermal degradation of the PTFE creates toxic compounds like PFIB, a chemical warfare agent ten times more lethal than phosphene, the one used in world wars I and II. Also emitted are aluminum, mercury, and cadmium--chemicals that affect the brain, These compounds are toxic to you and the environment as well.
PTFE is most notorious for its toxicity to birds in "Teflon toxicosis". The birds' lungs hemorrhage, fill with fluid and the birds suffocate. There are numerous reported examples of this such as pet birds dying when water being heated in a Teflon pan burned off completely. It is a reminder of canaries dying in mines as an indication to miners that the air was unsafe. Of interest is that warnings about birds appear on the Teflon website. Teflon Coating Of course, the site says that Teflon is safe to use "at normal cooking temperatures." Testing has shown that it gets too hot and gives off toxic fumes within minutes, even before bacon gets crisp.
In humans, exposure to PTFE breakdown and Teflon toxicity causes polymer fume fever. It is a fever mimicking influenza. Only a few cases of people in hospitals dying from overheated Teflon have been reported. DuPont, as the original inventor and product manufacturer of Teflon-coated products, conducted a study on humans with Teflon-laced cigarettes after their employees were becoming ill at work. Nine of the ten participants developed polymer fume fever. This is an environmental issue of Teflon. It is an occupational hazard to work on its production where perfluorooctanoic acid(PFOA) as a surfactant or emulsifier is used to combine an oily and watery mixture to make Teflon. PFOA in animal studies has been shown to be a carcinogen. The risk is both to workers and in how the PFOA is disposed of in the environment. Best Non Stick Coating In December 2005, Dupont was ordered to pay the largest civil administrative penalty the EPA has ever obtained under any federal environmental statute. Dupont had been hiding the toxicity reports of PFOA.
Teflon causes thyroid issues, increases infertility by 134 percent, is a carcinogen and an immune suppressant.  It contaminates the environment during manufacturing and does not break down in the environment. It has a relatively short life before the coating wears off because it is quite easily scratched. Some new non-stick supposedly non-toxic eco pans are available now but the coatings are still apt to scratch off. They are not a healthy nor an eco-friendly cookware choice. What Is Teflon

Everyone knows what ‘Teflon’ is, right? Nothing sticks to it – that’s what people say. But what exactly is it? What gives it those non-stick and other useful properties?
‘Teflon’ is a proprietary brand name. It actually pre-dates the space race by almost 30 years. It was invented as long ago as 1938 by Roy Plunkett at DuPont (which owns the brand name). Invented is perhaps the wrong word – it was observed during some other research, in much the same way Ceramic Coating that penicillin was discovered.
The word ‘Teflon’ has passed into our everyday lexicon and is used to describe anything slippery – especially politicians, of whom Ronald Reagan was the first to enjoy the dubious distinction.
What Properties Make Teflon Non-Stick?
Teflon is DuPont’s Tradmarked brand name for PTFE – polytetrafluoroethylene, a polymer. It is a long chain polymer, one of the biggest known to science. It is a solid fluorocarbon, and is hydrophobic. This means that it ‘rejects’ water. It is very stable and inert, due the high strength of the carbon-fluorine bonds, but its properties do degrade with temperature.
‘Slipperiness’ is measured by a material’s coefficient of friction. It has a ‘waxy’ feeling to the touch. Only two other solids are more slippery – aluminium magnesium boride, and diamond. Both these are very hard materials, unlike PTFE.
‘Stickiness’ is due to what are known as Van Der Waals forces. These forces operate at a molecular level between materials. They give the Gecko its ability to climb walls – unless of course they are coated with Teflon. Teflon is unique in this respect. The pads on a Teflon Coating Gecko’s feet have a relatively high Van der Waals force (actually a sum of three different forces), but Teflon’s are very low. So, there is little attraction – or ‘stickiness’.
Its other properties include ‘creep’. This is the ability to stretch without relaxing to its previous dimensions when strain is removed. It makes PTFE ideal for seals. Hence, it is loved by plumbers. (ie Tape Dope)
It is subject to wear where surfaces have regular relative movement, despite its slippery nature. It is now being combined with lubricants such as molybdenum disulphide which result in advanced composites which are ideal for hi-tech bearings typically used in aerospace applications.
Uses of Teflon
Its early uses focused on its chemical inertness and creep – it was used for gas-tight seals in the production of enriched uranium for the first atomic bomb in 1945.
Since then, many other interesting properties have been identified. The list of applications is amazingly wide:

Carcinogenic by-products can be released when it is heated beyond 260 Centigrade. This rarely happens in practice.
DuPont’s original production process used a toxic chemical known as PFOA but alternatives are now available and the use of the chemical is being phased out.
The Future of Teflon
New uses are still being found for it, and its utility is being extended by combining it with other chemicals.
China is now the world’s biggest producer (and consumer). DuPont produced 900 tons a year in 1948 and worldwide production is forecast to reach 240,000 tons by 2017.  So, despite its properties, Teflon is likely to stick with us for many years to come.

After all, nonstick coatings can scratch, no matter how high-quality the pan is, which renders the pan useless.
One exception to the rule is Swiss Diamond. This company's nonstick surface includes diamond crystals, which make a more durable surface and increase the nonstick properties. The company also claims the nonstick coating does not contain PFOA(A toxic chemical used in the manufacture of many nonstick coatings, which has been found to be persistent in the environment).
Although it seems like a gimmick, the diamond-reinforced coating is remarkably durable; I had one pan for 4 or 5 years before the finish began to be less effective (and then, it did not scratch, but instead started gradually losing its nonstick properties and got a bit gummy. You might be able to prevent this by never using nonstick cooking spray in your cookware, as it can leave a film that's difficult to remove.). Teflon Coatings The Swiss Diamond coating is not as "slick" as many other nonstick coatings, which means that foods like eggs will still leave a slight residue. But the more matte finish also means that the pan can have many of the benefits that an uncoated stainless pan; i.e. it browns foods like chicken better and leaves more residue that can flavor a pan sauce.
The pan is made of pressure cast aluminum and is heavier than most inexpensive nonstick pans. Aluminum is a highly conductive material; this pan heats quickly and uniformly and responds quickly to changes in heat. The pan is heavy, which could be a problem for some people (the larger skillets are particularly weighty), but the handle is comfortably positioned. What's more, the handle is ovenproof up to 500˚F, a nice advantage if you want to finish cooking a dish in the oven.
The price for Swiss Diamond cookware starts at around $50 for an 8-inch fry pan, which is on the high end, but with such a durable nonstick surface it is a worthy investment.

 5 out of 5swiss diamond cookware, Member warrenrseverinI recently purchased a 10 piece set. Man, what a difference from the so-called TV chef offered cookware. I have (had) both Wolfgang Puck's 10 pc. set and a small set of Rachel Ray's cookware. Ceramic Coating This Swiss Diamond set is the best I've ever had. Heats quickly and evenly at low to medium temps on a gas range, holds the heat well, (as opposed to Puck's, which will burn the - out of you if you don't watch it) and basically, if you're not a slob with your cookware, cleans up easier than spilled milk. As soon as finances permit, I will definately add to that set!

The Kuhn Rikon Santoku "Wave" Knife is a nonstick 6 inch bladed knife that is 10 1/2 inches overall and coated with a nonstick coating for easy use. The handle of the Santoku is form fitted for a secure grip and the knife comes razor sharp for great cutting and slicing.
The blade of the Santoku is coated with a nonstick coating, I'm not sure if it's Teflon, and comes with a razor sharp edge but you can easily sharpen it once it becomes dull. Non Stick Coating Spray The Santoku "Wave" also comes with a plastic sheath that is very handy to use with the knife if you don't use a knife block for storing the knife in a drawer.
I found the knife and it's sheath very handy for meal preparation and all around kitchen use in cutting, slicing, and all those choirs in the kitchen for food. Cutting harder vegetables like carrots was easy and the nonstick coating gives choirs like onions and even cheese an ease for not having things stick to the blade.
The six holes on the blade also aid in helping food not sticking to the blade while using and the blade holds an edge very well for a great knife. The sheath also aids in keeping that fine edge but when it does dull you can easily sharpen it with a kitchen knife sharpener.
I received two new sharpeners from Smith's and will be reviewing those soon but first I tried them both on the the Kuhn Rikon Santoku. Teflon Coatings I really did not need to sharpen the blade but wanted to check out how easy and how well the blade sharpens so after checking out the razor edge upon receiving the blade I sharpened it.
I used the Santoku for a couple of weeks and the blade really does come razor sharp, you can shave hairs off your arm with it when you receive it and sharpening it with a Santoku sharpener or a steel works equally well. I had no problems using both a sharpener that is specially angled for these knives as well as a steel and after some practice I can get a razor edge on the blade again.
The Kuhn Rikon Santoku "Wave" is a great inexpensive kitchen knife that works very well as a food preparation and all around kitchen knife for the chef of the family. The Santoku "Wave" from Kuhn Rikon may not be the higher costing knife but it is a great all around knife for meat slicing like trimming those steaks and chops.
I found the sheath worked great for a way to Ceramic Coatings keep the blade sharp and not have problems if you do not have a block to keep the knife in. I simply keep the sheath handy when using the blade, clean it off after using it and slide the plastic cover on the blade before tossing it in a drawer.
I highly recommend the Kuhn Rikon Santoku "Wave" for a great versatile general purpose kitchen knife available at many kitchen stores and on the internet for about $20.
